Leavening Agent can be added into baked foods or puffed foods whose main material is wheat meal. During the period of processing, after contacting heat it will decompose and generate air; then, it will enlarge the volume of food and form a porous and spongy structure, which makes food soft, delicious, and easier for digestion, etc. Leavening Agent can be divided into natural type and synthetic type. The latter can also be subdivided into single-dose type, two-dose type, and ammonia type of synthetic Leavening Agent.
