During the period of processing, cooking, and storing food, some food might discolor and lose burnish due to light, heat, oxygen or other chemical factors, etc. So in order to maintain the original color and keep it look good, we need to add coloring agent. Coloring agent can be divided into natural food color and synthetic food color; and according to the different dissolution properties, it can be divided into two types of water-soluble and oil-soluble.We need to select suitable coloring agents according to the property of food while processing food, such as heat resistance, light resistance, acid resistance and metal ions might cause the color to be changed.
